Ingredients

8 ounces salmon fillets
salt
pepper
1 tablespoon sake ( optional ) or 1 tablespoon white wine ( optional )
1 cup gluten-free flour or 1 cup rice flour
1/2 teaspoon salt
1 egg ( or Egg Replacer for 1 egg )
200 ml water
1 tablespoon sesame oil
1 1/2 cups scallions , cut into 2-inch length
oil for cooking the pancake
2 tablespoons tamari soy sauce
1 1/2 tablespoons rice vinegar
1 teaspoon red chili paste
1 teaspoon white sesame seeds
2 tablespoons scallions , thinly sliced ( white part only )
1 garlic clove , grated
Korean salmon and scallion pancake, or Pajeon, is a popular dish in Korea and around the world. This savory pancake is typically made with wheat flour, eggs, and various types of seafood and vegetables. Our version of the dish is gluten-free and features tender, flavorful salmon fillets and crisp scallions, all mixed together in a light and fluffy pancake batter. Serve this dish as an appetizer or side dish, or enjoy it as a main meal with a side of rice or salad.

Instructions

1.Season the salmon fillets with salt and pepper, and drizzle with sake or white wine.
2.Heat a non-stick frying pan over medium-high heat and cook salmon fillets for 3-4 minutes on each side, or until cooked through.
3.Remove from pan and let cool.
4.In a large mixing bowl, whisk together gluten-free flour, salt, egg (or egg replacer), water, and sesame oil until smooth.
5.Stir in scallions and cooked salmon.
6.Heat a non-stick frying pan over medium-high heat and add enough oil to coat the bottom of the pan.
7.Pour the batter into the pan and cook the pancake for 3-4 minutes on each side, or until golden brown and crispy.
8.Meanwhile, in a small mixing bowl, whisk together tamari soy sauce, rice vinegar, red chili paste, white sesame seeds, sliced scallions, and grated garlic to make a dipping sauce.
9.Serve the pancake hot with dipping sauce on the side.
