1 cup coconut sugar ( or brown sugar )
1/2 cup coconut oil ( or butter )
1 teaspoon gluten-free vanilla extract
1 cup almond milk ( or coconut milk or milk )
3 cups shredded coconut
2 cups pecans , finely chopped
This gluten-free German chocolate cake is a healthier alternative to traditional German chocolate cake. Instructions

1.Preheat oven to 350°F (175°C).
2.Grease two 9-inch (23 cm) round cake pans.

4.Melt the chocolate in a double boiler or microwave in 30 second increments, stirring in between, until fully melted.
5.In another mixing bowl, whisk together eggs, oil, water, and vanilla extract. Slowly add the dry ingredients to the wet ingredients, stirring until well combined.
6.Stir in the melted chocolate and chopped pecans into the batter.
7.Divide the batter evenly between the two pans and bake in the oven for 25-30 minutes or until a toothpick comes out clean.
8.While the cake is baking, make the topping. In a saucepan over medium heat, whisk together the egg yolks, coconut sugar, coconut oil or butter, vanilla extract, and almond milk. Cook while stirring occasionally until the mixture has thickened, about 12-15 minutes. Stir in the shredded coconut and finely chopped pecans.
9.Once the cake has finished baking, let it cool in the pans for 10 minutes, then remove from pans and place onto a wire rack to cool completely.
10.Once cooled, spread the dairy-free topping over the cakes, layering one on top of the other.
