200 g chocolate ( around 85 % cocoa )
200 g unsalted butter
200 g caster sugar
6 eggs , separated

Instructions

1.Preheat oven to 180°C (fan assisted).
2.Melt chocolate and butter in a heatproof bowl over a pot of simmering water and stir.
3.Remove the bowl from heat and stir in sugar.
4.Whisk egg whites with electric mixer till soft peaks form, using a separate clean bowl and whisk attachment.
5.Slowly whisk in egg yolks, one at a time, into chocolate mixture.
6.Gently fold whipped egg whites into the chocolate mixture until combined.
7.Pour batter into a greased and lined cake tin.
8.Bake for approximately 25-30 minutes, until a skewer inserted in the centre of the cake comes out clean.
9.Let cake cool for 10 minutes, then carefully remove from tin and let it cool completely on a wire rack.
10.Dust with cocoa powder before serving (optional).
