2/3 cup low-fat plain yogurt

Instructions

1.Preheat the oven to 400°F.

5.While the beef mixture is simmering, make the gluten-free cobbler: in a bowl, whisk together the gluten-free flour, baking powder, and a pinch of salt. Add the cold, chopped butter, and rub it into the flour mixture until it resembles coarse sand. Add the grated cheddar cheese, fresh thyme leaves, and chopped parsley, then pour in the yogurt. Stir just until the dough comes together- don't overmix.
6.Drop spoonfuls of the cobbler mixture on top of the beef mixture in the skillet.
7.Bake in the preheated oven until the cobbler is golden brown and the beef is hot and bubbly, about 20-25 minutes.
