125 g organic butter
4 tablespoons maple syrup
1/2 teaspoon baking soda
1 tablespoon boiling water

Instructions

1.Preheat oven to 160°C fan-forced.
2.Line large biscuit trays with baking paper.
3.Place rolled oats, flours, coconut, coconut sugar and butter in a large mixing bowl.
4.Place syrup in a small heat-proof bowl or cup.
5.In a separate small bowl, combine baking soda and boiling water (it will froth and fizz).
6.Add bicarbonate of soda mixture and maple syrup to mixing bowl.
7.Mix until thoroughly combined.
8.Roll heaped tablespoons of mixture into balls and place, 3cm apart, on prepared trays.
9.Flatten slightly.
10.Bake for 12-15 minutes or until golden.
11.Cool before serving.
