This recipe is a gluten-free and lactose-free version of a classic white bread, perfect for those who have dietary restrictions or who are looking for a healthier option than traditional white bread. The bread uses rice flour along with other gluten-free ingredients like potato starch, tapioca starch, and cornstarch. The addition of xanthan gum helps to give it a tender, chewy texture that is similar to regular bread. The bread can be made in an oven or bread maker, and is a great option for sandwiches, toast, or as a side dish for soups and stews. It can be a bit tricky to get the right consistency when working with gluten-free flour, but once you've nailed down the recipe, this bread becomes a staple in your household.

Instructions

1.In a large mixing bowl, add the rice flour, potato starch, tapioca starch, cornstarch, xanthan gum, salt, sugar, powdered egg substitute, and dry yeast. Mix everything together until well combined.
2.In a separate bowl, add the egg whites, vegetable oil, cider vinegar, and warm water. Mix until well combined.
3.Slowly pour the wet ingredients into the dry ingredients. Mix everything together until a sticky dough forms.
4.Transfer the dough to a greased bread pan or place in the bread maker pan if using a bread maker.
5.If using an oven, preheat it to 180°C. Once preheated, place the bread pan inside and bake for 45-50 minutes, or until golden brown. If using a bread maker, set it to the gluten-free bread setting and let it run.
6.Once done, remove the bread from the pan and let it cool on a wire rack before slicing.
