Ingredients

1/2 cup sugar
1/2 cup unsalted butter , softened
1 egg
1/4 cup finely ground almonds
1 1/2 cups all-purpose flour
8 -10 fresh apricots
3/4 cup sugar
4 tablespoons melted butter
6 tablespoons heavy cream
2 eggs , lightly beaten
1 teaspoon vanilla extract ( or the beans scraped from 1 vanilla pod )
1/2 teaspoon almond extract
1/2 cup finely ground almonds
1 teaspoon finely minced fresh lemon zest
6 tablespoons apricot jam
2 -3 teaspoons water
icing sugar

Instructions

1.In a mixer bowl, beat the sugar and butter together until the mixture becomes light and fluffy.
2.Gradually add in the finely ground almonds and all-purpose flour, beating until well combined.
3.Preheat the oven to 375°F (190°C)
4.Cut the apricots into halves and remove the pits.
5.In a small bowl, whisk together the melted butter, heavy cream, lightly beaten eggs, vanilla extract, almond extract,  finely ground almonds, and minced lemon zest until well combined.
6.Spoon the tart dough mixture into mini tart shells (or a large tart pan) and use your fingers to press it down and up the edges of the shells evenly. Place the apricot halves on top, cut side down.  
7.Pour the frangipane filling on top, making sure to fill up the edges of the shells.
8.Bake the tarts for 30-35 minutes, or until golden brown and the filling is set.
9.In a small saucepan, melt together the apricot jam and water until well combined.
10.Brush the melted apricot mixture over the top of the tarts evenly while they are still hot.
11.Allow to cool before serving, and sprinkle with icing sugar on top if desired.
