Ingredients

1 whole chicken
2 stalks lemon grass
12 cloves garlic
2 tablespoons salt
5 tablespoons peeled and chopped fresh turmeric
1 teaspoon whole white peppercorns

Instructions

1.Clean and rinse the whole chicken.
2.Crush lemon grass and garlic in a small grinder or mortar and pestle to a fine pastey consistency.
3.Add salt, turmeric and white peppercorns to the paste and mix all well.
4.Rub the chicken inside out with the paste that was just made with lemon grass, garlic, salt, turmeric, and white pepper. Make sure all parts of the chicken are covered with the paste, underneath the skin etc. Marinate for 2-3 hours or overnight for stronger flavor.
5.Preheat oven to 180°C/350°F.
6.Place the chicken in a roasting pan or on a baking sheet.
7.Roast the chicken for about 1 hour and 30 minutes or until golden brown, crisp and juicy .
8.Allow chicken to rest for 10-15 minutes before serving. Carve and serve with your favorite vegetables or salad.
