Instructions

1.In a large pot, combine the diced onion, chunked carrots, and potatoes.
2.Add the trimmed corned beef brisket, unsweetened apple juice, chopped cabbage, cloves, black peppercorns, water, brown sugar, vegetable or chicken stock, and prepared mustard.
3.Bring the pot to a boil and then reduce to a simmer. Cover and let cook for approximately 3 hours or until the meat is tender.
4.Once the meat is done, let it rest for approximately 10 minutes before slicing and serving with the cooked vegetables.
