Ingredients

500 g plain flour
1 teaspoon baking powder
1 teaspoon baking soda
3 teaspoons ground ginger
1/2 teaspoon cardamom
1 pinch salt
150 g unsalted butter , softened
175 g dark brown sugar
150 g honey
1 egg
1 egg white
240 g icing sugar , sifted , plus extra , for dusting
silver cachous , to decorate
The Gingerbread Christmas Tree is a festive dessert that is perfect for the holiday season. The ginger spice is commonly found in many Christmas dishes and adds a warm, sweet flavour to the gingerbread cookies. These cookies can be decorated with silver cachous as desired, creating a beautiful centrepiece dish on the table during parties and events for friends and family to enjoy. Instructions

1.Preheat the oven to 180°C/160°C fan/Gas 4.
2.Sift the flour, baking powder, baking soda, ginger, cardamom, and salt into a bowl. Mix well.
3.In another bowl, cream the butter and brown sugar together until it is light and fluffy.
4.Mix in the honey, egg and egg white.
5.Fold in the flour and ginger mixture until well combined.
6.Cover and chill the dough in the fridge for about 30 minutes.
7.Roll out the dough to 1/2 inch thickness on a floured surface.
8.Cut out different sizes of stars using cookie cutters to make the Christmas tree.
9.Place the stars on a baking tray lined with parchment paper with a few centimetres between each.
10.Bake for approximately 10-12 minutes until golden brown.
11.Once they are cooled, stack them up, starting with the largest at the bottom and the smallest at the top.
12.Mix the icing sugar with a little water and make a piping cone to create a decoration of your own choice, pipe it over the cooled gingerbread.
13.To finish the tree, sprinkle the silver cachous over the icing, and dust with extra icing sugar, if desired.
