Ingredients

1/3 cup vegetable oil
1 cup white sugar
3 eggs
1/4 cup molasses
2 1/4 cups all-purpose flour
1 cup whole wheat flour
1 tablespoon baking powder
1 1/2 tablespoons ground ginger

1/2 tablespoon ground cloves
1/4 teaspoon ground nutmeg

Instructions

1.Preheat oven to 375°F (190°C).
2.In a large bowl, mix together the oil, sugar, eggs and molasses.
3.In another bowl, sift together all-purpose flour, whole wheat flour, baking powder, ground ginger, ground cinnamon, ground cloves and ground nutmeg.
4.Stir dry ingredients into egg mixture until blended.
5.Divide dough in half and place on greased baking sheet.
6.With floured hands, shape each into a slightly flattened log, about 12 in. long and 2 in. wide. Leave about 3 in. between logs to allow for expansion.
7.Bake for 20-25 minutes or until golden brown.
8.Remove from oven and cool for 5 minutes. Reduce oven temperature to 325°F (165°C).
9.On a cutting board, slice each log into 3/4-in. slices.
10.Place cut side down back on baking sheet. Bake for an additional 10 minutes to dry the biscotti on each side.
11.Remove from oven and cool completely on wire racks.
