Ingredients

3 lbs tripe ( book or bible or towel tripe , not honeycomb tripe )
40 ounces chicken broth ( for boiling )
40 ounces water
3 ounces ginger , divided ( sliced and juilenned )
6 stalks scallions , divided
2 garlic cloves , divided , smashed
1 teaspoon sesame oil
1 cup rice wine , divided
1 teaspoon white pepper
1 tablespoon salt
3 dried red chili peppers
2 tablespoons peanut oil
3/4 cup chicken broth
2 tablespoons cornstarch
Ginger Scallion Tripe (Dim Sum Style) is a classic Chinese dish that is often enjoyed as a part of dim sum brunch. It is believed that tripe has been used in Chinese cuisine since the Qing Dynasty. The dish has a unique texture and flavor that perfectly complements the fragrant ginger and scallion sauce. Ginger Scallion Tripe can be enjoyed on its own or with plain rice for a hearty meal. Instructions

1.Wash and clean the tripe with a knife under running water.
2.Blanch the tripe for 15 minutes in hot boiling water. Check the texture, and blanch for another 5 minutes if needed.
3.In a separate pot, add chicken broth, ginger slices, scallion stalks, garlic, sesame oil, 1/2 cup rice wine, white pepper, and salt. Bring it to boil.
4.Remove the tripe from the boiling water and transfer to the pot with the chicken broth mixture. Add in the dried chili peppers.
5.Simmer gently for 30 minutes under low heat. Add more water or broth if needed.
6.Take out the tripe from the pot and slice it into pieces. Arrange the tripe slices on a plate.
7.Strain the sauce into a small pot and adjust the seasoning to your preference.
8.Heat up the peanut oil in a pan and add in scallion julienne and garlic. Toss them around until fragrant. Pour the sauce into the pan and heat it up.
9.Thicken the sauce with cornstarch mixture, pour it over the tripe, and serve hot.
