Instructions

2.In a large bowl, toss the shrimp with 3 tablespoons of the mixture; reserve the remaining mixture.
3.Preheat the grill.
4.Thread the shrimp onto skewers, piercing once near the tail and once near the head.
5.Grill the shrimp over moderately high heat, turning once, until opaque and lightly charred, 6 minutes.
6.In a medium saucepan, heat the remaining vegetable oil. Add the ginger, garlic and lemongrass and cook over moderate heat until fragrant, about 2 minutes.
7.Add the tomatoes and cook, stirring occasionally, until they have broken down and thickened slightly, about 10 minutes.
8.Stir in the reserved herb mixture, lime juice and cilantro. Season the tomato sauce with salt.
9.Serve the shrimp with the tomato sauce.
