Instructions

1.Preheat oven to 350°F. Line 2 baking sheets with parchment paper.
2.In a food processor, blend almonds until coarsely ground.
3.In a small bowl, combine ground almonds, cake flour, ginger, and baking powder.
4.In a large bowl, beat butter, brown sugar, and white sugar until creamy.
5.Mix in orange zest, egg yolk, and vanilla extract.
6.Add dry ingredients, mixing until just blended.
7.Fold in pistachios.
8.Divide dough into 2 portions on floured surface.
9.Using floured hands, shape each portion into 2 flattened logs.
10.Place logs onto prepared baking sheets.
11.Bake for about 25 minutes until golden.
12.Remove from oven and let cool for 15 minutes.
13.Using a bread knife, slice logs diagonally into 1/2 inch thick pieces.
14.Place slices back onto baking sheets and bake for additional 10-15 minutes, until crisp and golden.
