Ingredients

1 1/2 lbs sweet potatoes ( buy a mix of yellow-flesh sweet potatoes and orange-flesh `` yams '' )
1 saba banana , sliced bite-sized ( buy at Asian market )
2 cups water
1/3 cup mochiko sweet rice flour
2 tablespoons water ( or as needed )
14 ounces coconut milk ( do not use Cream of Coconut ) or 14 ounces light coconut milk ( do not use Cream of Coconut )
1/2 cup sugar

Instructions

1.In a pot, put sweet potatoes, saba banana and 2 cups of water.
2.Bring to boil and reduce heat, let it simmer until the sweet potatoes and banana are cooked.
3.Add the coconut milk and sugar, cook in low heat for 5 to 7 minutes.
4.In a separate bowl, combine mochiko sweet rice flour and water until it becomes paste like.
5.Add the mochiko sweet rice flour mixture to the pot and stir constantly for about 5 minutes until it thickens.
6.Remove from the heat and serve in bowls, enjoy!
