Ingredients

2 kg chicken meat , chopped into small pieces
200 g onions
250 ml natural yoghurt
50 ml vegetable oil
1 1/2 teaspoons cardamom seeds
25 g gingerroot ( chopped , NOT powdered )
4 garlic cloves
1 1/2 teaspoons fennel seeds
1 teaspoon cayenne pepper
1 1/2 teaspoons turmeric
1 cinnamon stick
2 cloves
350 ml cold water
Ghurka Chicken Cardamom Curry is a traditional Nepali chicken curry that is aromatic, complex and satisfying to the palate. Instructions

1.In a blender, puree the onions, natural yoghurt, garlic cloves, and gingerroot until smooth.
2.In a large pot, heat the vegetable oil over medium heat. Add the cardamom seeds, fennel seeds, cayenne pepper, and turmeric. Cook, stirring constantly, for 30 seconds to release their flavors.
3.Add the puree mixture to the pot, along with the cinnamon stick and cloves. Cook, stirring frequently, for 20-30 minutes or until the mixture is reduced down to a thick paste.
4.Add the chicken pieces to the pot, and stir to coat in the curry sauce. Add the cold water to the pot and bring to a boil.
5.Reduce the heat to low, cover the pot with a lid, and simmer for 45-60 minutes or until the chicken is cooked through and tender.
6.Serve the Ghurka Chicken Cardamom Curry hot with steamed rice, naan bread or your preferred accompaniments.
