4 large egg yolks , at room temperature
1/3 cup granulated white sugar
2 cups heavy cream

Instructions

1.Preheat oven to 325°F.
2.In a saucepan over medium heat, bring cream to a gentle simmer.
3.Remove from heat and add the white chocolate. Let it melt, stirring occasionally.
4.In a large bowl, whisk together egg yolks and sugar until creamy yellow.
5.Gradually pour in the chocolate cream, whisking constantly, and add vanilla extract.
6.Place four 6-ounce ramekins in a baking dish and divide the custard mixture evenly among the ramekins.
7.Fill the baking dish with enough hot water to reach halfway up the sides of the ramekins.
8.Bake for 35-40 minutes, or until the centers of the custards are set but still slightly jiggly.
9.Remove the ramekins from the baking dish and let them cool to room temperature.
10.Chill until ready to serve.
11.Sprinkle each ramekin with a teaspoon of granulated sugar and caramelize it with a kitchen torch, or place under the broiler until golden brown and bubbly before serving.
