Ingredients

2 cups water
3 lbs chicken , cut into 8 pieces ( bone in . I use drumsticks and thighs and remove the skin )
2 cans stewed tomatoes
2 teaspoons salt
1/4 teaspoon black pepper
3/4 cup smoked ham , cooked and cubed
1 cup rice , uncooked
1 large onion , sliced
3 cups green cabbage , shredded
1/2 lb fresh green beans , quartered and stems removed
1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
Ghana Jollof Rice is a popular dish in West Africa, particularly in Ghana, and is commonly served at parties and events. Instructions

1.Preheat the oven to 350F.
2.In a large pan, add water and chicken pieces. Bring to a boil, cover, reduce heat and simmer for 20 minutes. Remove the chicken pieces from the pan and set aside.
3.In the same pan, add stewed tomatoes, salt, black pepper, ham and rice. Mix well and bring to a boil.
4.Place sliced onions over the rice and tomato mixture. Cover, reduce heat and simmer for 15 minutes.
5.Add shredded cabbage, green beans, cinnamon and cayenne pepper. Stir well, cover, and transfer the pan to the oven. Bake for 20 minutes.
