1 lb fresh peach , approximately 3 large
1/2 teaspoon lemon juice
1/2 cup superfine sugar
1 whole star anise
1 1/2 cups sweet white wine , preferably Gewurtztraminer
2 tablespoons light corn syrup

Instructions

1.Bring a large pot of water to a boil. Fill a large bowl with ice and water.
2.Score an 'X' on the bottom of each peach, then place them into the boiling water for 25 seconds. Remove the peaches and immediately submerge them in the ice water.
3.Peel the skin from the peaches, then remove the pits and chop the fruit.
4.Add the chopped peaches, lemon juice, and sugar to a blender or food processor and blend until smooth.
5.In a small saucepan, combine the star anise, white wine, and corn syrup. Bring the mixture to a boil and cook until it has reduced to half its original volume.
6.Add the reduced wine mixture to the blender with the peach puree and blend again until combined.
7.Place the mixture in a freezer-safe container and freeze for at least 4 hours or overnight.
