1 cup seedless raisin
2 teaspoons finely grated lemons , rind of
1 cup milk
1 cup sugar
2 tablespoons all-purpose flour
1 egg yolk
1 egg white
2 tablespoons soft butter , plus
8 tablespoons melted butter
1 egg , lightly beaten with
1 tablespoon heavy cream

Instructions

1.In a small bowl, mix yeast and 1/2 tsp. sugar in lukewarm water. Stir well and keep it aside.
2.In another bowl, mix 1/2 cup sugar, salt, and flour together. Fold in the yeast mixture, lukewarm milk, and eggs. Mix well to form a medium-stiff dough.
3.Knead the dough on a lightly floured surface until it becomes smooth and elastic.
4.Place the dough in a greased bowl, cover it and set aside to rise until it doubles in volume, for about 1 hour.
5.In a food processor, pulse together poppy seeds, almonds, and raisins until it forms a fine powder.
6.Add lemon rind, milk, sugar, and flour. Mix well until smooth.
7.Preheat the oven to 350 F. Divide the dough into 2 parts. Roll each one into a 12x15 inch rectangle.
8.Spread the poppy seed mixture evenly on each roll, then roll it up from long end.
9.Place both rolls on a greased baking sheet and let it rise for 20 minutes.
10.Brush the rolls with a mixture of egg yolk and melted butter.
11.Bake until golden brown for about 35-40 minutes.
