Ingredients

2 tablespoons active dry yeast
1 tablespoon white sugar
2 1/2 cups warm water
2 tablespoons shortening
2 teaspoons salt
7 cups bread flour
3 egg whites , stiffly beaten
1 tablespoon cold milk
1 egg white
1 cup ice cubes
German-Style Weck Rolls, also known as Kummelweck rolls, are a traditional bread roll originating in Germany, shaped into a distinct oval shape with a creased surface on the top. Typically used for making sandwiches or as the base for classic German dishes such as roast beef on weck, these rolls have a distinctive flavor that comes from a unique blend of caraway and coarse salt on top. Instructions

1.In a large bowl, dissolve yeast and sugar in warm water and let stand about 10 minutes, until frothy.
2.Add shortening and salt to the yeast mixture and stir.
3.Mix in 4 cups of bread flour, 1 cup at a time, then add remaining 3 cups flour and stiffly beaten egg whites. Mix well.
4.Knead for 8-10 minutes on a floured surface, until smooth and elastic.
5.Put dough in a large greased bowl and cover with a clean kitchen towel. Let rise in a warm, draft-free place for about an hour, or until doubled in size.
6.Preheat the oven to 400 degrees F (200 degrees C).
7.Turn dough onto a floured surface and cut into 18 portions. Pull the edges of each portion to the bottom, pinching together to create a smooth surface on top. Place ice cubes in a pan in the bottom of the preheated oven and place the rolls onto a greased baking sheet. Brush each roll with milk and egg whites and let rise in a warm draft-free place for 30 more minutes.
8.Bake in the preheated oven for 20-25 minutes, or until golden brown. Cool on a wire rack.

PROS
