750 g fresh strawberries , washed , hulled , quartered
100 ml carbonated lemon-lime beverage ( such as Sprite )
2 teaspoons tequila
150 g granulated sugar
1/2 lemon , juice of
200 ml heavy cream
500 g fresh strawberries , thinly sliced , divided
1 teaspoon granulated sugar
20 g chopped pistachios , optional garnish
1 teaspoon powdered sugar , optional garnish
fresh mint leaves or lemon balm leaves ( optional )

Instructions

1.Preheat the oven to 350°F (180°C).

6.Warm the mixture over low heat, stirring until the sugar dissolves.
7.Gradually whisk in the gelatin until it dissolves.
8.Stir the gelatin mixture into the strawberry puree, and let it cool for about 15 minutes.
9.In a separate bowl, whip the heavy cream until it forms stiff peaks.
10.Fold the whipped cream into the strawberry mixture.
11.Arrange half of the sliced strawberries over the crust, and pour the strawberry mixture over them.
12.Smooth the surface, and refrigerate the torte for at least 6 hours or overnight until firm.
13.Decorate the torte with the remaining strawberries, pistachios, powdered sugar, and mint or lemon balm leaves before serving.
