Ingredients

50 g fresh yeast
100 g light brown sugar
250 ml soymilk
4 1/4 cups whole wheat flour

1 cup margarine ( vegan )
1/2 cup almonds , finely chopped
1 cup raisins
3/4 currants
1 cup mixed peel , chopped
225 g marzipan
olive oil , for finishing
icing sugar , for dusting

Instructions

1.In a small bowl, crumble the yeast and stir in the brown sugar and soymilk until well combined. Set aside for 5 minutes.
2.In a large bowl, mix together the flour, nutmeg, cloves, and salt. Stir in the yeast mixture, vanilla extract, almond extract, and margarine to form a dough.
3.Knead the dough on a floured surface for 10 minutes, then place it back in the bowl to rise for 1 hour.
4.Preheat the oven to 180°C. Mix the almonds, raisins, currants, and mixed peel into the dough. Roll out the marzipan and place it down the middle of the dough. Fold the dough over to cover the marzipan and shape it into a loaf.
5.Place the stollen on a baking sheet lined with parchment paper and brush it with olive oil. Bake for 1 hour, then remove from the oven and let cool. Dust with icing sugar before serving.
