2 1/2 kg starchy potatoes , divided
salt & pepper , to taste
caraway seed , to taste
1 medium onion , diced
175 g butter or 175 g margarine , divided
50 g ham , in small cubes
100 g flour
dry breadcrumbs , for dusting the pan
3 -4 sprigs fresh rosemary
1 garlic clove , chopped finely , more to taste
250 g sour cream or 250 g creme fraiche
5 -6 eggs ( medium-large )
additional sour cream , to garnish

Instructions

1.Preheat oven to 180°C (350°F).
2.Peel and grate half of the potatoes, then season lightly with salt, pepper, and caraway seeds.
3.Dice the onion, then sauté in 50 grams of butter or margarine until translucent.
4.Add the ham and continue to sauté for a few more minutes.
5.Mix grated potatoes with the flour, eggs, and remaining 125 grams of butter or margarine.
6.Season with salt, pepper, and chopped garlic to taste.
7.Grease a springform pan with butter and dust with dry breadcrumbs.
8.Place the grated potato mixture in the pan and smooth the surface.
9.Bake in the preheated oven for about 60 minutes.
10.In the meantime, peel the remaining potatoes and slice them thinly.
11.Heat up 1-2 tablespoons of butter or margarine in a nonstick skillet.
12.Add sliced potatoes to the skillet and sauté for 10-15 minutes, turning occasionally.
13.Season with salt, pepper, and fresh rosemary.
14.When the potato cake is done, remove it from the oven, let it cool for a few minutes, then remove the springform pan.
15.Spread the sour cream or creme fraiche over the top of the potato cake.
16.Arrange the sautéed potato slices in a circular pattern on top of the sour cream.
17.Garnish with additional sour cream and fresh rosemary.
18.Serve and enjoy!
