250 g sweet unsalted butter , at room temperature
170 g granulated sugar , divided
125 g finely ground almonds or 125 g hazelnuts
375 g all-purpose flour
2 envelopes vanilla sugar ( approx 2 tsp per envelope )
If you’re a fan of traditional German cookies, you’ll love Heidesand, also known as German Sand Cookies. This buttery shortbread cookie is thought to originate from the heathlands of Northern Germany and takes its name from the sandy texture that the cookies have. Heidesand is a classic German cookie that is enjoyed all year round but is especially popular during the holiday season. Traditionally, these cookies are baked with ground almonds, but hazelnuts can also be used.

Instructions

1.Preheat your oven to 160°C (320°F).
2.In a large bowl, beat the butter and 125 g of granulated sugar until creamy.
3.Add the finely ground almonds or hazelnuts, flour and vanilla sugar and mix until a dough forms.
4.Roll the dough into a log and wrap in plastic wrap. Refrigerate for 30 minutes.
5.Cut the dough into slices and place them on a baking sheet lined with parchment paper.
6.Sprinkle the remaining granulated sugar on top and bake the cookies for 12-15 minutes until golden brown.

They are not recommended for those on a low-calorie or low-fat diet.
