Ingredients

1/4 cup chopped pork fat or 1/4 cup chopped bacon
1 large red onion , finely chopped
2 inches fresh ginger , peeled and finely chopped
1/2 cinnamon stick
1 large red cabbage , tough outer leaves removed , quartered , cored , and finely shredded
1 sprig fresh marjoram
1/2 teaspoon garam masala
1/2 cup red wine vinegar
1/2 cup ruby port or 1/2 cup madeira wine
1/2 cup brown sugar or 1/2 cup real maple syrup
1 bay leaf ( optional )
1 whole clove ( optional )
1 firm apple , chopped ( optional )
German Rotkohl, or spiced red cabbage, is a traditional German side dish that is often served during the country's festive holiday season. Instructions

1.Heat pork fat or bacon in a heavy bottomed pot over medium heat.
2.Once fat starts to render, add onion and ginger and sauté until onion is translucent.
3.Add cinnamon stick, garam masala, marjoram, and red cabbage to the pot and sauté for about a minute.
4.Add red wine vinegar, ruby port or madeira wine, and brown sugar or maple syrup to the pot, stir everything together.
5.Add the bay leaf and clove (optional), cover the pot and reduce heat to low.
6.Allow cabbage to simmer for 30-45 minutes, stirring occasionally until cabbage is softened and the flavors have melded.
7.Add chopped apple during the last 5-10 minutes of cooking time if desired, and serve hot.
