6 medium potatoes , approximately 1 1/2 pounds
2 cans sauerkraut , drained
1 lb smoked sausage , thinly sliced
1 cup thousand island dressing
4 tablespoons parsley flakes
1 teaspoon caraway seed
1/8 teaspoon black pepper
1 1/2 cups swiss cheese , shredded
1 green pepper , cut into strips

Instructions

1.Preheat the oven to 375°F.
2.Grease a 9x13 inch baking dish.
3.Peel and slice the potatoes into 1/4 inch thick rounds.

5.Spread half of the sauerkraut over the potato layer.
6.Layer half of the sliced smoked sausage over the sauerkraut.

9.Add the remaining potato slices, sauerkraut, smoked sausage, and dressing, in that order.
10.Sprinkle with the remaining parsley flakes, caraway seed, and black pepper.
11.Place the green pepper strips on top.
12.Cover the baking dish with aluminum foil and bake for 50 minutes.
13.Remove the foil and sprinkle the shredded swiss cheese over the top.
14.Bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
15.Let the casserole cool for a few minutes before slicing and serving.
