The German red berry sauce, also known as rote grütze, is a popular dessert in Germany with origins dating back to the early 14th century. It is made from fresh or frozen berries and thickened with sugar, cornstarch and sometimes pudding powder. It is often served over waffles, pancakes, ice cream or rice pudding. The sauce can be made using various tart fruits such as red currants, black currants, raspberries, cherries, blueberries, and strawberries. It is the perfect addition to any dessert for those who want to add a fruity twist to their desserts.

Instructions

.Rinse red currants and black currants under cold water and then remove from stems.
.In a cooking pot, bring red currants, black currants, raspberries, and cherries together with 4 cups of water to a boil on medium heat. Stirring occasionally, allow the fruits to cook for 10 minutes.
.Once the fruits have cooked down, remove the pot from the heat and let it cool for 5 minutes.
.After cooling, sieve out the fruit mixture with a fine mesh strainer to obtain the juice base. Gently press the fruit mixture against the strainer to extract all the juice. Discard the fruit pulp.
.Pour the juice base back into the cooking pot and over low heat, stir in cornstarch until fully dissolved.
.Next, add in the sugar and strawberries to your juice base, stirring until everything is well mixed together.
.Allow the entire mixture to simmer over low heat for approximately 10-15 minutes, stirring occasionally to prevent sticking and burning. The sauce will thicken as it cooks.
.Remove your sauce from heat and allow it to cool to room temperature before you serve it with your desserts.
