1 3/4 lbs beef , for pot roast
3/4 lb onion
2 stalks celery
1 cup Noilly Prat , dry vermouth
2 slices bacon , thick
1 tablespoon mustard , German
1 teaspoon juniper berries
1 bay leaf
5 -10 peppercorns
2 tablespoons sunflower oil
1 teaspoon salt
1 teaspoon pepper

Instructions

1.Preheat your oven to 325°F.

8.Remove the roast and let it rest for 10 minutes before slicing. Serve with the vegetable sauce.
