1 beef soup bone ( I have used beef short ribs )
1 tomatoes , small , diced
2 green onions , finely sliced
1 clove , whole
2 peppercorns
1/2 small bay leaf
1 medium carrot , sliced
1 celery heart , sliced
2 beef bouillon cubes
2 eggs
6 tablespoons flour
2/3 cup milk
1/8 teaspoon salt

Instructions

1.Put the bone, tomatoes, onions, clove, peppercorns, bay leaf, carrot, celery, and bouillon cubes in a large saucepan.
2.Add enough water to cover the contents of the saucepan and bring to a boil over medium heat.
3.Reduce heat and let simmer, partially covered, for 1 ½ hours.
4.In a small bowl, beat the eggs and add the flour, milk, and salt. Mix well until smooth.
5.Slowly pour the egg mixture into the soup, stirring constantly, until it reaches a creamy consistency. Cook for 5 more minutes, until thick and bubbly.
6.Discard the bone and season with salt and pepper to taste. Serve hot.
