Ingredients

1/2 lb lean ground beef
1/2 lb ground lean pork
1 medium onion , chopped
3 tablespoons breadcrumbs
3 tablespoons cold water
2 large eggs

Instructions

1.Preheat oven to 375°F (190°C).

5.Gently press the peeled hardboiled eggs down into the center of the meatloaf.
6.Place the bacon pieces on top of the meatloaf, tucking them in slightly around the edges.
7.Drizzle the vegetable oil over the top of the meatloaf and bacon.
8.Bake in preheated oven for 1 hour, or until browned and cooked through.
9.In a small bowl, mix beef broth, hot water, and cornstarch together.
10.Pour mixture around the meatloaf, and bake for another 10-15 minutes, or until the sauce thickens slightly.
11.In a separate bowl, mix together the sour cream and 1/4 cup of water to make a smooth sauce. Serve the meatloaf with the sauce on top.
