Ingredients

3/4 lb ground beef
1/2 lb ground veal
1/2 lb ground pork
1/4 cup chopped scallions or 1/4 cup onion
1/4 cup chopped fresh parsley , dried parsley is ok
1 beaten egg
1 1/2 teaspoons salt
1 1/4 teaspoons pepper
1/4 cup fresh breadcrumbs , which are soaked in
beef bouillon ( liquid Bovril , Magi , etc.,1/2 bouillon cube and 1/4 cup water OR 1/2 teaspoon Bovril and 1/4 cup wate )
1/4 teaspoon rosemary , crushed
1 pinch nutmeg
1/4 lb bacon
4 tablespoons butter
4 tablespoons flour
3 cups water
sherry wine ( to taste )
milk
salt and pepper

Instructions

1.Preheat the oven to 375°F.
2.In a large bowl, combine the ground beef, ground veal, ground pork, scallions/onion, parsley, beaten egg, salt, pepper, soaked breadcrumbs, rosemary, and nutmeg. Mix together until well combined.
3.Grease a loaf pan with butter, and then add the meat mixture to the pan. Use your hands to pack it down tightly.
4.Lay the bacon slices on top of the meatloaf.
5.In a separate saucepan, melt the butter over medium heat. Add the flour, and whisk to combine.
6.Slowly pour in the water, whisking continuously to avoid lumps. Cook for 5 minutes until the sauce has thickened.
7.Add the sherry wine and milk to the sauce, and continue to whisk until smooth.
8.Pour the sauce over the meatloaf and bacon slices.
9.Cover the meatloaf with aluminum foil, and bake for 90 minutes or until fully cooked.
10.Remove from the oven, and let the meatloaf rest for 5 minutes before slicing and serving.
