1 1/2 lbs pork shoulder
1 lb pork suet
1 pint heavy cream
3 tablespoons minced chives
1 onion , minced
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/4 teaspoon mace
1/4 teaspoon grated nutmeg
sheep casing , washed and dried

Instructions

1.Begin by grinding pork and veal in a meat grinder using a medium grinding disc.
2.Grind the pork suet using a fine grinding disc and set aside.

4.Add the mixture to a sausage stuffer and stuff into sheep casings.
5.Poach in simmering water for about 20 minutes or until the internal temperature reads 160°F.
6.Remove from water and plunge in cold water for 5-10 minutes to stop the cooking process.
