Ingredients

1 1/2 lbs white asparagus
1 cup flour
150 ml light german beer
1 egg , separated
salt
1 tablespoon canola oil
canola oil ( for frying )
1 hard-boiled egg
2 german pickles
1 small onion
1 1/2 cups mayonnaise
2 tablespoons chopped parsley
2 tablespoons chopped chives
salt and pepper
lemon juice
mustard

Instructions

1.Peel the asparagus and cut off the tough ends.

4.Heat enough oil in a pan to come 1 inch up the sides to 360°F (180°C)
5.Dip each asparagus spear into the batter, ensuring that it is fully coated.
6.Using tongs, fry the asparagus spears in the hot oil for 3-4 minutes, until golden brown and crispy.
7.Remove asparagus from oil and drain on a paper towel.
8.To make the herb cream, finely chop the hard-boiled egg, German pickles and onion.
9.In a mixing bowl, whisk together mayonnaise, chopped parsley, chopped chives, lemon juice, mustard, chopped egg, onion, and pickles until well combined.
10.Serve the fried asparagus with herb cream.
