Instructions

1.In a large saucepan, heat milk, butter, sugar, lemon rind and salt until butter is melted.
2.Add flour all at once and stir until mixture forms a ball and pulls away from the sides of the pan.
3.Remove from heat and let cool for a couple of minutes before adding eggs one at a time. Stir well between each addition until mixture is smooth.
4.Heat oil or shortening to 375°F (190°C).

6.Dust with confectioners ' sugar before serving.
