Ingredients

2 lbs Brussels sprouts , washed and trimmed and cut in half ( or 2 lbs frozen brussels sprouts , thawed and cut in half )
2 tablespoons butter
1 small onion , chopped
1 medium carrot , peeled and chopped
2 tablespoons flour
1/4 teaspoon dried marjoram , crushed
1/4 teaspoon pepper
1/8 teaspoon nutmeg
3 cups vegetable broth ( or chicken broth )
1 egg
1 cup half-and-half
2 tablespoons dry white wine
salt , if needed , to taste

Instructions

1.Melt butter in a large pot over medium heat

4.Slowly add the broth, whisking constantly until the mixture is smooth

6.Reduce heat to low, cover and cook for about 15 to 20 minutes or until the Brussels sprouts are tender
7.In a small bowl, whisk together egg, half-and-half and wine
8.Slowly add this mixture to the soup, whisking constantly
9.Cook for a couple of minutes until heated through
10.Season with salt if needed
11.Serve hot
