Ingredients

1/2 lb white beans , soaked overnight in water to cover
8 cups water
1/2 cup cubed bacon or 1/2 cup country ham
1/4 lb green beans , cut into bite-sized pieces
1/2 celery root , peeled and cut into bite-sized cubes ( if you ca n't find celeriac , use 2 stalks of celery , cut into cubes )
1 carrot , peeled and cubed
1/2 leek , sliced into thin rings
1 onion , roughly chopped
1 parsley root , cubed ( or 1/2 cup chopped parsley )
1/2 lb small red potato , unpeeled and cubed
1 tablespoon marjoram , crumbled between your palms
1 teaspoon thyme , crumbled between your palms
2 bay leaves
1/2 cup parsley , chopped
1 tablespoon butter
1 tablespoon flour
salt and pepper
German Bean Soup (Bohnensuppe) is a traditional soup often served in the winter months to warm you up on a chilly day. Instructions

1.Drain the soaked beans and add them to a large pot with water and cubed bacon or country ham.
2.Bring the pot to a boil, and then lower the heat to a simmer and cook for 1 hour until the beans soften and the broth thickens.
3.Add in the green beans, celery root or celery, carrot, leek, onion, parsley root or parsley, marjoram, thyme, and bay leaves.
4.Simmer the soup until the vegetables are cooked to your liking.
5.In a small saucepan, melt the butter and whisk in the flour, making a roux to thicken the soup.
6.Stir the roux into the soup and cook for an additional 5 minutes to thicken the broth.
7.Season the soup with salt and pepper to taste, and garnish with chopped parsley before serving.
