Ingredients

1 head lettuce ( I used butter lettuce mixed with red loose leaf lettuce however any heirloom lettuce would be ideal )
1 cup watercress ( rocket ) or 1 cup arugula ( rocket )
1 small red onion , diced
8 -10 small red radishes
3 tablespoons fresh borage leaves , chopped ( and a few borage flowers if available )
freshly grated black pepper
2 tablespoons white wine vinegar
1 pinch salt
2 tablespoons oil ( I used walnut )

Instructions

1.Wash and chop the lettuce and watercress (or arugula) and place them in a large salad bowl.
2.Wash and thinly slice the red onion and add it to the salad.
3.Wash and thinly slice the radishes and add them to the salad.
4.Wash and chop the borage leaves (and flowers, if available) and sprinkle them on top of the salad.
5.Add freshly grated black pepper to taste.
6.In a small bowl, mix together the white wine vinegar, salt, and oil until well combined.
7.Drizzle the dressing over the salad and toss everything together until evenly coated.
8.Serve and enjoy!
