Ingredients

1 large onion , peeled and finely grated
1 tablespoon lemon juice , strained if fresh
1 tablespoon olive oil
1 teaspoon salt
1/4 teaspoon black pepper , freshly ground
2 lbs boneless lamb shoulder or 2 lbs leg of lamb , cut into 1 inch cubes
2 medium onions , cut into 1/4 inch chuncks
10 scallions , trimmed
1 lemon , quartered
The Georgian Shashlyk is a traditional dish from the Caucasus region that is typically made with lamb, though it can be made with other meats like beef or pork. The marinade is what sets this dish apart, with its combination of grated onion, lemon juice, and aromatic spices. Instructions

1.In a large bowl, mix together the grated onion, lemon juice, olive oil, salt and pepper.
2.Add the cubed lamb and mix well. Cover and refrigerate for at least 2 hours, or overnight.
3.Soak wooden skewers in water for 30 minutes.
4.Preheat grill to medium-high heat.
5.Thread the marinated lamb cubes, onion chunks, scallions and lemon quarters onto the skewers, alternating between each.
6.Grill the skewers for 10-12 minutes, turning occasionally, until the lamb is browned and slightly charred.
7.Serve hot with additional lemon wedges.
