2 zucchini

24 small potatoes , peeled
1600 g skinless chicken breasts , 8 pieces
2 liters vegetable stock
2 egg yolks
400 ml cream
1 bunch parsley

100 g margarine
100 g flour
Gentse Waterzooi is a creamy Belgian chicken stew that hails from the city of Ghent. The recipe dates back to the Middle Ages and has been a Belgian favorite ever since. It usually consists of chicken, vegetables, and cream, all cooked together in a broth to create a rich, creamy stew. It is often served with boiled potatoes or crusty bread on the side. Gentse Waterzooi is a comforting and delicious meal that is perfect for colder weather.

Instructions

1.Begin by thoroughly washing all the vegetables. Peel and finely slice the onions. Cut the celery, zucchini, and carrots into small bite-size pieces. Slice the mushrooms into thin pieces. Cut the leeks into small rings. Chop a small handful of parsley. Set everything aside.
2.In a large pot, melt the margarine. Once melted, add the flour and stir until combined. Slowly pour in the vegetable stock while continuously stirring. Add the chicken breasts and bring everything to a boil. Reduce the heat to medium-low and let it all simmer for approximately 10 minutes.
3.After 10 minutes, add in the potatoes and chopped vegetables. Let everything simmer for an additional 20 minutes on medium heat. To give the stew a creamy texture, beat the egg yolks and cream together in a small bowl. Add a few spoonfuls of the hot broth from the pot to this mixture and beat well. Slowly pour this mixture into the pot while stirring continuously to prevent any lumps from forming.
4.Cook for another 5 minutes while continuously stirring, until the broth has thickened and the chicken and vegetables are cooked through. Season the stew with salt and pepper according to taste. Serve hot, garnished with parsley.
