Ingredients

8 cups cold water
8 large tomatoes - peeled , seeded and chopped
1/4 cup minced onion
1 clove garlic , minced
1 cucumber , peeled and finely chopped
1 green bell pepper , minced
1 loaf stale French bread , cut into 1 inch cubes
1/4 cup olive oil
1/4 cup wine vinegar
1/8 tablespoon salt
Gazpacho Andaluz is a cold soup that originated in Andalusia, Spain. The soup is made from fresh vegetables such as tomatoes, cucumber, and peppers, as well as stale bread. Instructions

1.In a blender, combine chopped tomatoes, minced onion, minced garlic, chopped cucumber and minced green bell pepper.
2.Puree until smooth.
3.In a separate bowl, soak the cubed French bread in cold water for 10 minutes.
4.Squeeze the water out of the soaked bread and add it to the blender with the tomato mixture.
5.Add olive oil, wine vinegar and salt to the blender and puree again until smooth.
6.Chill the gazpacho in the refrigerator for at least an hour before serving.
