Instructions

1.Preheat a skillet over medium heat. Add dried ancho chili, dried casabel chili, and jalapeno.
2.Once the peppers are blackened and blistered, remove from skillet and place them inside a sealed bag for 5 minutes.
3.Take out the pepper seeds and chop the peppers.
4.Finely chop the roma tomatoes and red onion and mix them with the pepper mixture.
5.Squeeze the juice of the limes and stir it with the vegetable mixture.
6.Add pureed chipotle chiles, roasted garlic, and salt into the mixture and stir well. Finally, chop the cilantro, add it to the mixture, and stir well again.
