Ingredients

1 cup besan flour or 1 cup bengal gram flour
1/2 teaspoon turmeric powder
salt
1 teaspoon red chili powder
1 teaspoon kasuri methi
1/4 teaspoon ajwain or 1/4 teaspoon carrom seeds
2 teaspoons oil
water , to bind dough
oil , gatte ( for frying )
1 cup curds or 1 cup yogurt
2 tomatoes
2 teaspoons red chili powder
2 teaspoons coriander powder
2 teaspoons turmeric powder
2 teaspoons cumin powder
1 teaspoon cumin
1/2 teaspoon hing or 1/2 teaspoon asafoetida powder
salt , as per taste
2 tablespoons ghee
coriander leaves ( to garnish )
Gatte Ki Subji is a traditional Rajasthani dish that is also popular in other parts of India. It is made with gram flour dumplings or gatte that are cooked in a spiced yogurt gravy. This dish is known for its aromatic flavors and spicy taste. It is often served with roti or rice and is perfect for a wholesome and satisfying meal. Gatte Ki Subji can be made in advance and stored in the refrigerator to be enjoyed later.

Instructions

1.In a mixing bowl, add besan, turmeric powder, salt, red chili powder, kasuri methi, ajwain or carrom seeds, and oil. Mix well and add water slowly to make a firm dough. Knead well for 5 minutes.
2.Divide the dough into equal portions and roll each portion to form a cylindrical shape, about 1 inch in thickness.
3.Boil water in a saucepan and add gatte. Cook for 10-12 minutes or until they rise and float on top. Drain and keep aside.
4.In a separate pan, heat ghee and add cumin. When it splutters, add hing or asafoetida powder. Next, add the chopped tomatoes and cook until soft.
5.Add all the dry spices to the pan and cook for 2-3 minutes.
6.Add whisked yogurt and cook on low flame.
7.Add boiled gatte to the pan and simmer for 10 minutes on low flame until the gravy thickens.
8.Garnish with coriander leaves and serve hot with roti or rice.
