2 1/4 cups flour
6 tablespoons sugar
1 teaspoon rum
2 egg yolks
1 egg yolk ( beaten , for glaze )

Instructions

1.In a large mixing bowl, combine 1/2 cup sugar and 4 tablespoons unsalted butter until fluffy.
2.Add 3/4 cup flour, 1/8 ounce yeast, a pinch of salt, 1 teaspoon rum and 1/2 teaspoon each of vanilla extract and almond extract, mix well.
3.Add 1 cup milk to a medium saucepan and scrape in the seeds from 1/2 vanilla bean. Heat over low heat until it comes to a simmer.
4.Meanwhile, add 2 1/4 cups flour, 6 tablespoons sugar, 1 teaspoon rum, and 2 egg yolks to your large mixing bowl. Stir until combined.
5.Slowly pour the hot milk mixture into the mixing bowl and whisk until smooth.
6.Remove the dough from the mixing bowl and place it on a floured surface. Knead with your hands until it forms a ball.
7.Divide the dough into 2 pieces and flatten each piece into a disk shape using your hands.
8.Spoon the French pastry cream onto one of the disks, but leave a little space around the edges so that you can seal the gateau without the filling falling out.
9.Place the other disk over the top, leaving a little space around the edges.
10.Crimp the edges of the gateau with a fork to seal.
11.Brush the beaten egg yolk onto the top of the gateau.
12.Bake for about 25-30 minutes at 350°F/175°C or until the gateau is golden brown on top.
13.Let the gateau cool for a few minutes, then dust with powdered sugar before slicing and serving.
