Ingredients

600 g new potatoes , scrubbed
4 tablespoons olive oil
6 cloves garlic , finely chopped
2 teaspoons fresh thyme leaves
4 lamb chops ( about 175g each )
2 zucchini , chopped into rough triangles
4 ripe tomatoes , quartered
This garlicky lamb roast is a delicious and easy recipe that is perfect for a hearty dinner on a cool evening. Instructions

1.Preheat the oven to 200C/180C fan/gas 6.
2.Boil your potatoes in salted water for 8-10 minutes until slightly softened. Drain well.
3.Mix the olive oil with the garlic and thyme in a large roasting tin. Add the lamb chops and toss to coat in the garlic mixture.
4.Add your zucchini and quartered tomatoes and toss everything together.
5.Nestle the boiled potatoes in the tin and roast for 20-25 minutes until the lamb is cooked to your liking and the vegetables are tender.
6.Serve hot, garnished with extra thyme leaves if you like.
