Ingredients

2 bunches fresh cilantro , 1 inch of stems ( use roots if possible too )
1 head garlic , cloves separated and peeled
1/4 cup vegetable oil
1/2 teaspoon fresh ground pepper
1 lb large raw shrimp , peeled and deveined
1 cup water
3 - 3 1/2 tablespoons fish sauce ( nam pla )
2 tablespoons sugar
sliced cucumber ( optional )
sliced radish , and ( optional )
tomatoes ( optional )

Instructions

1.Use a mortar and pestle to pound the cilantro stems and garlic into a rough paste. (If you don't have a mortar and pestle, you can chop the cilantro and garlic until they become a paste.)
2.Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the cilantro-garlic paste and cook until fragrant, about 1 minute.
3.Add the shrimp and pepper and stir-fry until the shrimp turn pink, about 3-4 minutes.
4.Add the water, fish sauce, and sugar to the wok or skillet and stir well.
5.Continue to cook over high heat until the sauce thickens and the shrimp are cooked through, about 2-3 minutes.
6.Serve the shrimp topped with fresh cilantro, sliced cucumber, radish, and tomatoes (optional).
