Ingredients

1 package spinach linguine
1/2 pint grape tomatoes , cut into thirds
1/2 cup freshly grated Parmesan cheese
1/2 cup garlic scapes , chopped
1/3 cup olive oil
1/4 cup fresh basil leaves
4 sun-dried tomatoes
1/2 lemon , juiced
salt and ground black pepper to taste
cooking spray
1 bag baby spinach leaves

Instructions

1.Cook spinach linguine according to package directions.
2.While the pasta is cooking, make the pesto. In a blender or food processor, combine the garlic scapes, olive oil, basil leaves, sun-dried tomatoes, lemon juice, Parmesan cheese, salt, and black pepper. Blend until smooth.
3.Drain the cooked pasta and return it to the pot. Add the pesto and grape tomatoes, stirring until well combined.
4.Place a large non-stick skillet over medium-high heat. Spray the skillet with cooking spray and add baby spinach leaves. Sauté until wilted, about 2 minutes.
5.Serve the pasta topped with sautéed spinach leaves.
