Ingredients

1/2 cup garlic scape , finely chopped
3 large jalapeno peppers , finely chopped ( discard seeds & only use the pith from one pepper )
1 large sweet green pepper , finely chopped
6 cups sugar
1 1/2 cups vinegar
4 drops green food coloring ( optional )
1 package liquid Certo

Instructions

1.In a large pot, mix together the garlic scapes, jalapeno peppers, green pepper, sugar, vinegar and food coloring.
2.Bring the mixture to a boil over medium-high heat, stirring frequently, and continue to boil for 10 minutes.
3.Remove the pot from heat and add the liquid Certo. Stir well for 5 minutes.
4.Pour the hot jelly mixture into clean and sterilized jars, leaving 1/4 inch space from top.
5.Wipe the rims of jars, place lid on top and screw bands just until fingertip-tight.
6.In a large pot, place jars covered with 2 inches of water, bring to a full boil and process jars for 10 minutes.
7.Remove the jars from the boiling water and place on a towel or a wire rack.
8.Allow the jars to cool down completely.
