Ingredients

1 cup quinoa
2 cups vegetable broth
1 tbsp olive oil
2 cloves garlic, minced
8 oz mushrooms, sliced
1/4 tsp salt
1/4 tsp black pepper
1/2 tsp dried thyme
1/4 cup grated parmesan cheese

Instructions

1.Rinse quinoa under cold water
2.In a pot, bring the vegetable broth to a boil
3.Add quinoa and reduce heat to low
4.Cover and simmer for 18-20 minutes until all liquid is absorbed
5.In a pan, heat olive oil over medium heat
6.Add garlic and sauté for 1 minute
7.Add mushrooms, salt, pepper, and thyme
8.Sauté for 5-7 minutes until mushrooms are tender
9.Fluff quinoa with a fork and mix in mushroom mixture
10.Stir in parmesan cheese before serving
