Ingredients

2 cups great northern beans
1 teaspoon baking soda
12 cups hot water
2 tablespoons instant chicken bouillon granules
1/4 teaspoon dried rosemary
1/4 teaspoon dried thyme
1 bay leaf
10 -15 garlic cloves , separated but unpeeled
3 onions , peeled & coarsley chopped
1 shallot , chopped
5 medium carrots , coarsely chopped
4 stalks celery , chopped
1/4 cup chopped fresh parsley
1 cup lean ham , cubed
salt & pepper

Instructions

1.Rinse the beans in cold water and place them in a large Dutch oven or pot with baking soda.
2.Add hot water, instant chicken bouillon granules, dried rosemary, dried thyme, bay leaf, unpeeled garlic cloves, chopped onions, shallot, chopped carrots, and celery. Cover with a lid and bring to boil over high heat.
3.Lower heat to medium and simmer for about 1 hour 30 minutes or until beans are tender.
4.Remove bay leaf and garlic cloves from the pot. Peel the garlic cloves and add them back to the pot. Discard the bay leaf.
5.Use an immersion blender to blend the soup until smooth, or transfer the soup in batches to a blender and blend until smooth. Stir in the chopped ham and chopped parsley. Season with salt & pepper.
6.Serve with garlic bread on the side.
